Taste ↣ Glazed Salmon

I love salmon in general but I really love this salmon recipe. This glaze is a perfect mixture of sweet and salty and the best part about it is you probably already have all the sauce ingredients (love when that happens!) The first time I tried this recipe was when I was dating my husband. It was a last minute dinner date and all I had was some salmon in the fridge. So to spice it up a bit (and show off some good girlfriend cooking skills) I literally mixed up whatever ingredients I had at the time. I love any recipe that doesn't require a trip to the grocery store! After the first time making this recipe, I (and Russell) now can't have salmon without it. Hope you enjoy it as much as I do!

Explore ↣ Amalfi Coast Favorite

Amalfi Coast, Italy

The "Path of the Gods" Hike is not for the faint of heart but well worth the view. While most people visiting southern Italy go to Pompeii or the island of Capri (which we did as well and recommend), this hike is a must do in Amalfi and what I believe has some of the best views I have experienced so far. After eating pounds and pounds of incredible but heavy Italian food, a hike is exactly what your body needs. The hike took us about half a day and while we were not prepared for what we were getting ourselves into, if you bring plenty of water, snacks, and comfortable shoes you should be good to go. But instead of taking my word for it, here are a few snapshots I took along the way.

Anyone else booking their ticket right now?
With love,
E

Explore ↣ Amalfi Coast, Italy

Praiano, Italy (Amalfi Coast)

Stay:

My husband and I are very fond of bed and breakfasts (which will become pretty clear after several of my travel posts.) There are amazing hotels out there and I have stayed at a lot over the years, however, recently we have discovered the new world of enjoying cozy, beautiful B&Bs with home cooked and delicious breakfasts. To me, it's the small things each B&B does to make your vacation just a little more special. I would say not all are created equal though and we do a lot of review reading before we decide on the one, but the good ones have created some of my favorite memories of our trips.

For a trip to the Amalfi Coast, I actually don't think you could pick a bad place to stay. There are a ton of B&Bs or hotels along the coast and they all look beautiful (plus your view is the coast of Italy.) But I will show you the details of where we stayed and absolutely recommend it. When we go back, we will be staying with them again!

Eat:

Italy= food from heaven. You really can't go wrong eating anywhere in Italy. As I mentioned earlier, an added bonus to staying at a B&B is complimentary amazing breakfasts. This breakfast was pure perfection. We stayed a week at this hotel and only ate at another place one time throughout our trip. The food was so good we couldn't leave it and the view wasn't too bad either. By the end of the week their personal chef (who cooked every meal) knew us and our exact orders. The last few nights he even started bringing out different dishes and desserts just for us to try. I can't even write out the words to explain how incredible their chef was. All this to say when you go to Italy just eat anywhere and prepare to eat a lot.

Taste ↣ Oatmeal Breakfast Shake

This is my go to quick, healthy breakfast option. It is so easy to make and keeps me full for hours. This shake is perfect for mornings when you are running out the door and need breakfast to-go. I don't think I could have a bad start to my day drinking this pretty pink shake!

Taste ↣ Tomato Basil Soup

Soup might not be a first thought for summer dinners but after seeing these gorgeous fresh tomatoes at our local farmers market I knew they would be a part of our dinner that night. I also love any crock pot recipes on days where I know we will be busy later in the day. I can make it in the morning and it's ready to go whenever we have time to eat later. This recipe is extremely easy to make and with no creams used it's a perfectly
healthy dinner option!

Our First Post

Hi friends and beautiful ladies!

Today is the day we finally step into the world of blogging. We know there are a lot of bloggers out there and we don't intend to be the best or most creative but we want to at least have fun with this experience and see where it goes. I am a registered nurse but since I am in the process of looking for a job and tend to have a lot of free time, I decided to indulge in a few other passions of mine and document it along the way.
A few of those passions you will see on here is learning new recipes through cooking, baking, and juicing. I love healthy eating but I don't believe eating healthy means losing the flavors that you enjoy. So my job will be to learn new recipes that my husband will not even notice are healthy. I am starting tonight with turkey meatballs (we will see if he notices that they are turkey.)
Along with cooking I would say my other favorite "hobby" is travel. My husband and I take every chance we get to explore a new place. We believe there is no better use of time or money than making memories discovering new areas, appreciating the world's beauty, learning about cultures, and meeting new people. I guess you could say "Eat Well,Travel Often" is our marriage life quote and I think it is a good one to have.
Lastly I love learning and researching about healthy lifestyles. I have always been this way hence why I probably leaned towards the medical field. So my final section on this blog will be anything new I have researched lately that can help increase our healthy living. I am not an extremist and I don't personally believe that is the best way to go. My belief is everything in moderation. Do your best and forget the rest.
I am very excited to start this new chapter of blogging and I couldn't ask for better girls to go through this journey with.

With Love,
E

Hi Everyone!

I am so excited to be starting this blogging journey as I am also beginning an exciting new chapter of life after college.  I recently graduated from the University of Florida with my master’s degree in Elementary Education and I am beginning my first year of teaching.  I’ve always wanted to start blogging but I never felt like I had the confidence to start one on my own.  I was so excited when Erika and Lexi wanted to start one together.
When I am not busy at school with my 2nd graders, I will be blogging about some of the things I love.  One of those things has been picking out furniture and decorations for my new apartment.  Although I am no expert, I have enjoyed interior design and decorating for as long as I can remember.  I’ll be moving in with my 2 roommates in a couple weeks and posting pictures of some of those projects I have been working on.
I am also one who loves to travel however I always end up taking way to many pictures.  I recently got back from a trip to London and fell in love with the city.  But when it comes down to it, I am happiest when I am in the mountains and closest to nature.  Having my summers off to travel is one of the great things about being a teacher.  Hopefully I will find time during the school year to take some weekend trips and blog about my adventures.
Thanks for coming along with us on this blogging journey.  Always feel free to leave comments. We’d love to hear your feedback.
